It’s cool to know people who are mushroom enthusiasts. Even in the darkest December they might head off to the forest for a few hours to enjoy the fresh air and look at their favourite mushroom spots for some bits of deliciousness.

And while the yields of such excursions can look disappointingly small, it’s amazing how much flavour is in there and how far you can get with a few of them. Chopped and friend in creamy sauce, for example, with a dash of sherry as I learned this time and served with Schupfnudeln made them a fantastic little dish.
